Why must reactant particles collide with one another for a reaction to take place?

Because bonds can only break and new bonds be built where the particles meet. Two particles that never come near each other cannot react.

A collision does not change the mass of the particles, nor does it break them into pieces. What happens is that existing bonds break and the atoms join up in a new arrangement.
