Why can jackfruit latex not be washed off with water?

Latex is non-polar and water is polar. Like dissolves like. The two are not alike, so the latex does not dissolve and stays where it is.

The same rule explains the companion question about styrofoam: it and petrol are both non-polar, so the styrofoam dissolves.
