What is the difference between evaporation and distillation?

Distillation condenses and collects the vapour; evaporation does not. Evaporation keeps what is left behind. Distillation catches what comes off, and that one change is what makes it so much more powerful.

It is why the technique needs a condenser at all. The liquid collected after the vapour is condensed is called the distillate.
