Angular. The oxygen atom sits at the vertex with the two hydrogen atoms below it, because the two lone pairs on the oxygen push the bonds closer together.

A straight molecule would place the oxygen between two hydrogens in a line, and its two ends would then cancel out — water would not be polar and would behave completely differently. Square and triangular do not describe a three-atom molecule.
