Why would a grower pollinate anthurium by hand?

It settles both whether pollination happens and which plant the pollen came from. A crop can be guaranteed where insects are scarce, and the grower chooses exactly which two plants are crossed.

Artificial pollination still deposits pollen on a stigma — it is the same event, done by a hand or a brush instead of an insect. Fruit without fertilisation is parthenocarpy, and nothing about hand pollination changes which flowers a plant bears.
