Why does the "growth" of a crystal differ from the growth of an organism?

Because a crystal gets larger by material added from outside, while an organism grows from within. What separates them is not whether the characteristic appears but how it comes about.

The same argument applies to movement: a ripple moves because an outside force pushes it; an organism moves of its own accord. "A crystal does not get larger at all" is wrong — it does.
